It is often said the best pizza in the world is found in Naples, Italy. There, pizzaiolos craft handmade pizzas from local ingredients like San Marzano tomatoes and Mozzarella di Bufala Campana cheese made from the milk of water buffalo raised in the marshlands of Campania and Lazio.
We are inspired by the idea behind these world famous pizzas—that the best food is made with fresh, local ingredients. That’s why we use whole wheat flour from Stockdale Mill (Roann, IN), New Rinkel Flour from Greenfield Mills (Howe, IN) and honey from Winger's Sugar Bush (North Manchester, IN) to make our pizza crust, employing methods similar to those practiced in Italy like gentle kneading, slow fermentation, hand shaping, and fast baking in a hot, wood-fired oven. We compliment the crust with cheese from Swissland Cheese Company (Berne, IN) and sauce, vegetables, and meats from our farm. The result is pizza that can only be found in our corner of Indiana.
